Cheese Straws

A favorite for Christmas gifts and cocktail parties. I sometimes press 5 coriander or cumin seeds into the tops as a variation. These freeze well. I use 1 teaspoon of cayenne, but some people find that to be too spicy.
The dough for this is extremely stiff and thick - when it is done it will be more like a shortbread dough - it will not be a squishy, stretchy mass that sticks together in one uniform ball.
If you need to, you can add a half teaspoon of water to make the dough come together, but please do not add too much water or the straws will have too much moisture in them and they will not be crispy. — posted by xtine
